Ingredients:
- 4 fresh salmon fillets
- Salt and pepper to taste
- 2 ripe avocados
- 1 lemon
- 2 cloves of garlic
- 2 tablespoons olive oil
- Chopped fresh parsley
Instructions:
Preheat the oven to 200ºC and prepare a baking tray with aluminum foil.
Place the salmon fillets on the tray and season with salt, pepper and the juice of half a lemon. Bake for 15-20 minutes or until salmon is cooked.
Meanwhile, prepare the avocado sauce. In a bowl, mash the avocados with a fork until smooth.
Add the chopped garlic, the juice of the other half lemon, the olive oil and salt to taste. Mix all ingredients well.
Once the salmon is ready, serve the fillets on individual plates and top with the avocado sauce. Sprinkle with fresh chopped parsley and enjoy.
